In the Dragon Ball storyline, Son Goku's white hair is a result of his mastery of the Ultra Instinct technique. This technique allows him to move and fight with incredible speed and precision without thinking, letting his body react instinctively to attacks. During his fight with Jiren in the Tournament of Power, Goku reaches a new level of Ultra Instinct that causes his hair to turn completely white. This transformation amplifies his power even further, and he becomes able to match Jiren's strength.
